Spiced Pumpkin Bread with Cranberries and DatesThe Goddess loves this time of year, when the frost is on the pumpkin, the leaves are a riot of color and there’s just a slight chill in the air.  It’s soup weather.  It’s stew and chili weather.  And it’s time to make pumpkin bread!  Continue reading →

Almond Bundt Cake, Gluten-FreeThis is a gluten-free cake and if I didn’t tell you that, I doubt if you would realize it.  It is delicious, moist and just slightly dense, but in a good way.  This is from the King Arthur Flour™ website, with just a couple of minor additions…citrus zest!!!  Continue reading →

Crispy Zucchini—Carrot and Parmesan FrittersI love fritters.  They’re a great way to use veggies.  They’re a great way to use up leftover veggies and they’re fried.  And anything fried is just better.  Face it.  It’s true.  You know it’s true.  Continue reading →

Banana-Coconut Cake with RumThis is a light, but moist cake, with a nice pure flavor and a great texture.  It doesn’t have an over-pronounced banana flavor.  It’s subtle.  And it’s tropical, with bananas, coconut and rum.     Continue reading →

Bumpy Road BrowniesThese little oozy, gooey squares of rich, chewy chocolate goodness are perfect for…well pretty much anytime.  I’ve been making a non-chocolate based version of these for years.  Yeah, alright…I should have thought about this sooner, but I didn’t.  Better late than never.  Continue reading →

Pastel de JamonThis is a really nice addition to your Sunday brunch or for this season, Thanksgiving day breakfast.  We had a slice with some salad for a nice, light supper, and as a side with a bowl of Creamy Mushroom-Pumpkin Soup with Sherry.  I think if might be good with gravy, as in biscuits and gravy…just a thought!  Continue reading →

Beef Stew with DumplingsWith autumn deeply upon us, cozy, comfort food is so welcome.  For the Goddess, dumplings are a homey-comforting-cold-weather sort of meal.  These are not the meat-filled Asian variety, nor the biscuit-type Southern variety, nor the firm German potato dumpling.  No, these are the light, fluffy-type of dumplings.  A cloud of goodness sitting atop a mound of, in this case, beef stew.   Continue reading →
