This week I’ve been pan-frying things, with coffee on my mind!  Here in the Northeast, we appear to be in full summer.  You know, after our 15 minutes of Spring, and I finally gave in and kicked on the A/C…A/C is a is probably one of the greatest inventions of our time.  It’s a big thing with The Goddess.  However, being the Northeast, we may still have a killing frost; one never knows.  I tell you, The Goddess loves living on the edge!  Anyway, pan-frying is just a good thing to know how to do and do well.  It’s pretty much all about a heavy pan and heat control.  Continue reading →

It was drizzly, and rather chilly today…you may have heard…it’s Spring!  Soup seemed like the perfect antidote to not-so-perfect weather.  This soup has everything green and everything springtime in it.  It’s a flexible soup, too.  You can limit the mixture to 2 or 3 ingredients or expand it 5 or 6.  And if that’s not enough, there are also flavor or seasoning options.    Continue reading →

The winter is almost behind us and along with it, the soup pot on the back burner will disappear in favor of quicker, greener and cooler soups.  Before we retire the soup pot and since there’s still some snow on the ground, I thought we should have one last comforting bowl of the winter elixir, that is soup.  Continue reading →

023Pea soup is winter in French-speaking Canada.  The pot is always on the stove and the more you reheat this soup, the better it tastes.  It keeps the freezing cold at bay, is very economical to make, is filling and plain and simply put…it’s good.  Continue reading →

Midwestern Cauliflower-Cheddar Soup…with a Twist!

There are as many versions of cheese soups as there are brands of beer…well maybe not quite THAT many versions.  This version uses a lager/apple cider reduction, potato and cauliflower as part of the ingredients.  It’s yummy and creamy, like it should be, but there isn’t as much added heavy cream (or no cream at all, if you so choose), therefore we cut some calories, still have the creaminess we adore and add lovely flavors, too.  Continue reading →

Leftover mashed potatoes?  What a perfect and perfectly quick way to make soup for dinner.  Potato soup is a blank canvas.  There are so many variations, it’s hard to choose.  It can be eaten cold or hot; we definitely want it hot today!  It’s creamy comfort, with or without the cream.  Continue reading →

020This is not-your-mother’s-chicken soup, but a Coq au Vin-ish type of soup; it’s rustic, earthy comfort food at it’s best and easiest.  It takes about 30 minutes to make and with some minor changes, this can become a stew.  How flexible is that?  Continue reading →

006“Old Mother Hubbard
Went to the cupboard
To get her poor dog a bone,
When she got there
The cupboard was bare
So the poor little dog had none.”

We all remember this nursery rhyme, right?  This soup is the perfect cold-weather-bare-cupboard-meal.  It uses things many of us have on hand and if you don’t have these things, then you haven’t been paying attention.  Continue reading →
