Sicilian-Style Beef Stufato

152Sicilians cook a bit differently than mainland Italians do.  Their cuisine is primarily a combination of Roman, Greek, Arab and Spanish settlement, with a smidge of French and German thrown in for fun.  At some point, they all held sway over Sicily.  We’re going to focus primarily on the Moors, who ruled Sicily for over 240 years;  their influence on the language and cuisine, was and is profound.  One of their major influences remains today, the cultivation and use of oranges and lemons.  The Moors also brought the cultivation of eggplants, dates, rice and sugar cane.  While the Romans brought wheat to Sicily, it was the Moors who promoted the production through superior irrigation.  This lead to the creation of portable dried pasta.  The Moors brought cinnamon, pistachios, almonds and desserts with honey.  This Stufato or stew, owes its flavors primarily to the Moors and with a smidge of the other conquering people tossed into the pot! 004San Choy Bow is what we’re really talking about here…Lettuce Wraps with Asian Flavors or the simpler and more to the point, Chinese “Tacos”.  These can be prepared quickly, are incredibly delicious with a mix of salty-sweet flavors (they have hoisin sauce in them) and kids love them…at least ours did and do.  This is fun food, with the benefit of being delicious.  Continue reading →

Clementine (or Orange) Chicken

052As you may have heard, The Goddess loves citrus.  Orange slice candies, you know those chewy, gelatinized candies in the shape of oranges sections; I tell ya’ they should be a food group…along with bacon.  Not together, that would just be disgusting.  But back to the subject at hand—Clementine or Orange Chicken.  This is a relatively quick dish to prepare.  I prefer to use fresh tangerine, Clementine or orange peel, instead of the usual dried tangerine peel.  The chicken has a lovely carmelized quality and then the punch of orange and the Szechwan pepper.  This will wake up your New Year’s celebration.  Continue reading →

Heathen Gypsy Soup

024I know we’re supposed to be done with soups, but the snow is coming down by the bushel, there’s already 10 inches (25cm) on the ground and it’s still coming down.  Therefore,  being the benevolent Goddess that I am, I’m giving you 2, count ’em t-w-o, recipes today.  The first is yet another soup, but it’s nice and simple.  I have no idea why I called this Heathen Gypsy Soup…maybe because the ingredients in this soup would be readily available anywhere and would make it easy to prepare, given the nomadic qualities of the gypsy life-style.  Who knows on what level The Goddess’s mind operates (or doesn’t!)?  Anyway, I just ate a bowl for lunch and decided it was worth sharing after all.  It’s really just a good, straight-up vegetable soup.  You roast the vegetables (around the campfire where you are singing and dancing and doing other gypsy things…no stereo-types here, huh?), then make the soup.  Or better yet, use leftover roasted vegetables from last night’s dinner and cut the cooking time in half.  It’s a win-win either way.  The real key to this soup, is to simply use whatever vegetables you have lurking in your fridge.  Continue reading →

020This is not-your-mother’s-chicken soup, but a Coq au Vin-ish type of soup; it’s rustic, earthy comfort food at it’s best and easiest.  It takes about 30 minutes to make and with some minor changes, this can become a stew.  How flexible is that?  Continue reading →
