Who the hell is Dom Pedro you’re asking?  And what does he have to do with pot roast?  The Portuguese-born Dom Pedro I was the first ruler of the Empire of Brazil back in the 19th century.  He has nothing to do with pot roast per se, but here we join together some of the best of both Portuguese and Brazilian flavors, for a winning combination.  Continue reading →

This rice is along the line of the everyday rice many Mexican cooks prepare.  And it’s good.  It’s really delicious.  But, it’s so much more, because once you capture the basic, there are so many, many different flavor roads to travel down.  Think of this as just the beginning of your culinary journey.  Continue reading →

Meatloaf, Cuban-StyleYou may remember, in the past…yes, The Goddess is a deity with a past!  Everyone has a past, and goddess-willing, it’s interesting and rich with memories.  Anyway, there were a couple of posts for Boliche and Boliche, Deconstructed, as well as picadillo.  This is simply boliche in meatloaf form.  An experiment going deliciously well!  Continue reading →

Tomato SoupThis is a simple, full-flavored version of tomato soup.  I’ve already posted Simply Tomato Soup (with Options) and this is more or less that.  But, I’ve tweaked and changed a few things and frankly, simplified the recipe.  This is in keeping with our recent discussions of “basic” soups.  And really, who doesn’t like a good, simple tomato soup?   Continue reading →

Eggplant, Zucchini and Tomato Casserole with Lebanese 7-SpiceThis is a layered affair.  If you aren’t familiar with Lebanese 7-Spice or Baharat, you might want to wander into a Middle Eastern market and pick some up.  This blend uses the “sweet” spices, like allspice, cardamom, cinnamon, etc.  But, it’s wonderful in savory dishes.  It lends itself particularly well to lamb and as it turns out, eggplant, zucchini and tomatoes.  Continue reading →

Tomato-Leek & Fennel Soup with LentilsI like lentils.  Actually, as far as legumes go, I think lentils may be my favorite.  The Latin Lover is, shall we say, less fond of them.  A bad childhood memory.  But I’m trying to convert him.  It’s always good to eradicate a bad childhood food memory and create a new, all-gown-up food memory!  I think this soup may have done it!   Continue reading →
