My mother came from a long line of damn fine cooks. Some cooked meat well, others were bakers. I always think of Aunt Mary as a baker. Though I suspect she could make a mean pot roast. She made this pie. It was her little bit of heaven, and it is a culinary delight to behold. Continue reading
Honestly, I really had been thinking about potato soup today. I had leftover mashed potatoes, with just a bit of parsnip in them. This is a perfect situation to make a soup. I had some ham, a couple of slices of jamón Iberico, a few leftover roasted baby potatoes, and I shredded up a carrot. You can see the “roots” of a soup, can’t you?
Small meatballs are a great tapa. This is a really nice blend to form into patties for breakfast sausages, either with or without the mustard-cream sauce…though, you know…it’s all about the sauce! Or it should be.
It’s garlic scape time! The Goddess lives for this time of year. There’s so much we can do with them and these mushrooms are a great vehicle to shine a delicious light on them!
This is a “meal” soup. I fixed this for a special someone who had just driven for about nine hours. After that grueling ordeal, you don’t want something too heavy. You want comfort food. You don’t want to be stuffed, but you’re hungry. This soup is the perfect solution for that dilemma.
Grits are Southern comfort food. I was never that enamoured with them, until I had grits with cream and cheese added. OH, yeah! So good and so versatile. You can eat them as is, with a nice plop of butter, melting and oozing into the grits, or use them as a side, instead of rice or mashed potatoes, or sprinkled with bacon.
Okay, so Carrot Soup has been done before. The Goddess does not live under a rock, so she’s aware of this. But, she thinks it’s just a good idea to master “basic” recipes. Then that recipe can then be a “jumping off” point for new flavor adventures. This is such a recipe.
Every now and then we need to return to the very “root” (or tuber, in this case) of cooking. This is one of those “basic” recipes. And soup is a great place to begin. Most of us love soup, or at the very least, like it. Particularly, when the thermometer begins to dip, as it is these days. But, we shouldn’t leave soup off of our summer menu, as many soups have the wonderful flexibility of being served either hot or cold. Potato soup is no exception…vichyssoise, anyone?
The Spicy Honey has an office BBQ and thought it would be a good idea for The Goddess to “whip up” dessert. He’s thoughtful that way. But, The Goddess doesn’t mind, because dessert is good, and this is particularly good. It’s rich, creamy and just delicious, so isn’t that just the perfect thing to have at a BBQ?
When I made this there was a hurricane brewing out there in the Atlantic. And it hit North Carolina. It hit hard near the coast. Sadly, there are far too many people who suffered terrible loss at the hands of Mother Nature and will continue to deal with the devastation left in the wake of Flo. We were very fortunate that Flo changed her mind and lost some steam by the time she arrived inland. But, life goes on and you have to keep up your strength to brave the elements and repair the damage done.
