Spanish tortilla is a lovely egg, potato and onion concoction that is so flexible it can either be supper or an hors d’oeuvre; it can be served hot, warm, room temperature or cold.  It can be made ahead, is actually best made a couple of hours ahead, and can be reheated.  Best of all, it’s absolutely delicious!  Continue reading →

Clementine (or Orange) Chicken

052As you may have heard, The Goddess loves citrus.  Orange slice candies, you know those chewy, gelatinized candies in the shape of oranges sections; I tell ya’ they should be a food group…along with bacon.  Not together, that would just be disgusting.  But back to the subject at hand—Clementine or Orange Chicken.  This is a relatively quick dish to prepare.  I prefer to use fresh tangerine, Clementine or orange peel, instead of the usual dried tangerine peel.  The chicken has a lovely carmelized quality and then the punch of orange and the Szechwan pepper.  This will wake up your New Year’s celebration.  Continue reading →

Chinese Fried Rice

Fried Rice is a favorite of The Latin Lover; well really, who doesn’t like fried rice?  It’s fried, after all.  This is the version I made yesterday, but it changes according to what I’m feeling and what I’m serving the rice with.  Rice is a blank canvas for flavor!  You will need cold rice, so plan ahead…there it is again!  Continue reading →

Heathen Gypsy Soup

024I know we’re supposed to be done with soups, but the snow is coming down by the bushel, there’s already 10 inches (25cm) on the ground and it’s still coming down.  Therefore,  being the benevolent Goddess that I am, I’m giving you 2, count ’em t-w-o, recipes today.  The first is yet another soup, but it’s nice and simple.  I have no idea why I called this Heathen Gypsy Soup…maybe because the ingredients in this soup would be readily available anywhere and would make it easy to prepare, given the nomadic qualities of the gypsy life-style.  Who knows on what level The Goddess’s mind operates (or doesn’t!)?  Anyway, I just ate a bowl for lunch and decided it was worth sharing after all.  It’s really just a good, straight-up vegetable soup.  You roast the vegetables (around the campfire where you are singing and dancing and doing other gypsy things…no stereo-types here, huh?), then make the soup.  Or better yet, use leftover roasted vegetables from last night’s dinner and cut the cooking time in half.  It’s a win-win either way.  The real key to this soup, is to simply use whatever vegetables you have lurking in your fridge.  Continue reading →

I have a confession.  I’ve never been that big a fan of buffalo chicken wings.  I don’t know why, but I was always more interested in the celery and bleu cheese dressing.  I love bleu cheese; I’m weird that way.  With Super Bowl looming on the not-too-distant horizon, I got to thinking about other possibilities and this is what I came up with…Buffalo Chicken Sauce on Pasta.  Continue reading →

Midwestern Cauliflower-Cheddar Soup…with a Twist!

There are as many versions of cheese soups as there are brands of beer…well maybe not quite THAT many versions.  This version uses a lager/apple cider reduction, potato and cauliflower as part of the ingredients.  It’s yummy and creamy, like it should be, but there isn’t as much added heavy cream (or no cream at all, if you so choose), therefore we cut some calories, still have the creaminess we adore and add lovely flavors, too.  Continue reading →
