Slow-roasting salmon, is simple and allows for more margin of error. In other words, it’s much harder to overcook salmon (or any fish, for that matter). But, it really about the texture. The texture of slow-roasted salmon is silky and unctuous. It’s sexy salmon! You’re going to like this.
Think of this cole slaw as a “monsoon” of tropical flavors…pineapple, mango, orange…need I say more? Okay, maybe I do, but you’re going to want to slap this on some fish tacos or anything seafood-y. Or just have it for breakfast.
I can’t believe I haven’t posted this before. Yes, The Goddess was holding out on you, and after you make this you’ll be ticked that she did. But, she’s trying to redeem herself here. It’s time to share. These will grace your appetizer table over and over. The combinations of flavor and texture are just sublime.
Coffee is essential to the life-blood of The Goddess. If she doesn’t have a cup in her hand, she’s thinking about getting one. Coffee adds a wonderful richness to foods. And well, it just tastes so damn good.
Allspice, guava, orange, beer and a pork butt…it’s a marriage made in the heavens. Truly it is. This was the perfect meal to cook in the pressure cooker. Yes, The Goddess has a new toy.
This is The Goddess’s first posting from rainy South Florida, and what better meal than red snapper and shrimp with a great sauce? (Did I mention, it’s all about the sauce? I did…oh, okay!) I had forgotten how often it rains here, but that did not dampen our dinner, the first one together in our little furnished apartment…it’s like we’re newlyweds again!
