I was thinking of Chinese food. Truth be told, I’m usually thinking about food, and many times it leans Chinese. I love egg rolls or spring rolls. I was thinking about egg rolls. Dreaming, really. So with the winter chill, I was thinking about tossing together a soup of some sort. And with the Asian New Year around the corner, light bulb moment!!! Why not combine the two?
Pimento Cheese Spread is synonymous with the Southern US. It’s everywhere and can be easily purchased in the deli section of most supermarkets. Now purists would have us believe, and they’re probably right, that the supermarket stuff is well, YUK! But, in a pinch, and when you don’t know what the “real thing” should taste like, it’s not too bad!
The Brazilians add corn to things. We don’t usually add corn to our hot dogs, but they do…Yup, hot dogs. As well as, those yummy little potato sticks. So, this is different, but it is a wonderful version of chicken salad. It’s creamy, has a nice pure flavor, a little crunch at the end. It’s just flat-out delicious. 

This combines flavors from both the English-speaking, as well as the Spanish-speaking Caribbean. The best of both flavor worlds.
I really do so enjoy imitation crab meat. I know it’s not crab meat. I just like it. It’s never fishy when it’s heated. It has a nice consistency, it’s easy to work with and it just tastes so good. And it was really good in these patties.
This is a nice, fruity and lighter version of cole slaw. In summer, I like to add mango, pineapple, peaches, or nectarines to cole slaw. I dress this version with a sweet chile vinaigrette, which compliments the fruit just ever-so nicely. It’s summery.
The English-speaking Caribbean offers us some wonderfully complex flavors. Jerk Chicken is one of the dishes that’s synonymous with the islands. It’s has a nice kick of heat, is highly spiced and delicious. Thus, making it the perfect summer grilling dinner. You and your guests will love it.
