I mentioned yesterday that The Youngest One brought some Hunter’s Sausage from Vermont.  I made Grilled Potato Salad, and grilled cauliflower, but he loves cole slaw.  He is particularly fond of the Sweet Mustard Summer Slaw, I’ve been making over the…wait for it…SUMMER!  Continue reading →

038Slow-roasted, brown sugar-crusted corned beef with beer and onion gravy.  Why would you save this just for St. Patrick’s Day?  It’s much too good and so simple to be left to one day a year.  It makes a great Sunday dinner and the house will smell good enough to eat!  Continue reading →

141Okay, these aren’t necessarily “baked” beans.  They can be, if that’s what you want to do and you have the time.  Otherwise, make this “quick and dirty” version in about 20 minutes.  They have tons of flavor and if you toss some cut-up hot dogs into the mix, cook some rice, add a tossed salad or green veggie, you can have dinner on the table in under 30 minutes.  Continue reading →

079Gazpacho is the perfect summer soup.  In Andalusia, it’s smooth, unctuous and creamy.  The Goddess loves that version.  She could bathe in that version.  But, she’s also just a tad unconventional, so she also really likes a slightly chunkier version with bits of crunchy vegetables, too.  That’s what this is!  Continue reading →

060This is just yummy and a terrific weekday meal.  It’s also great for a dinner party.  It’s fast AND delicious; it can be a one-pan wonder.  It works with any fish, but I think I like it best with a white fish, as opposed to salmon.  The sauce positively sings when used with sea bass…we’re talking arias here.  Continue reading →

It’s that time of year.  The lazy, hazy days of summer.  The hammock and a tall, cold drink.  And then there’s the zucchini.  Don’t you love that first zucchini?  You sauté it and relish its fresh, clean flavor, thinking, “I could eat these forever”.  Continue reading →

Nutmeg is an interesting spice.  The holiday season wouldn’t be complete without it.  Apple and pumpkin pies and who doesn’t love egg nog?  Nutmeg works on both sweet and savory levels, though most of us think of it as a sweet spice, but today let me introduce you to its savory side.   Continue reading →

091I mentioned a couple of things in yesterday’s Classically Good Potato Salad post—boiled dressing and Hard-boiled Eggs.  Neither of those things sound very sexy, do they?  But, these are both things you should know how to prepare well….first, boiled dressing….  Continue reading →

This week I’ve been pan-frying things, with coffee on my mind!  Here in the Northeast, we appear to be in full summer.  You know, after our 15 minutes of Spring, and I finally gave in and kicked on the A/C…A/C is a is probably one of the greatest inventions of our time.  It’s a big thing with The Goddess.  However, being the Northeast, we may still have a killing frost; one never knows.  I tell you, The Goddess loves living on the edge!  Anyway, pan-frying is just a good thing to know how to do and do well.  It’s pretty much all about a heavy pan and heat control.  Continue reading →

050Good crab cakes are rich and soft, with an almost creamy texture and crispy crust.  I know there are those that think crab cakes must have Ritz® Crackers crushed up in them, but I beg to differ.  Panko crumbs are a more neutral flavor and will give you a much less dense, softer textured crab cake.  You’ll get plenty of that rich, butter flavor when frying the cakes; make certain they are dark brown.  Caramelization is “One Fine Thing”.  Continue reading →
