When I made this there was a hurricane brewing out there in the Atlantic. And it hit North Carolina. It hit hard near the coast. Sadly, there are far too many people who suffered terrible loss at the hands of Mother Nature and will continue to deal with the devastation left in the wake of Flo. We were very fortunate that Flo changed her mind and lost some steam by the time she arrived inland. This is a nice alternative to the typical shrimp cocktail. Also, it has dill. Dill is an underused herb and it’s a great foil for shrimp. Ketchup adds a little touch of sweetness and the lemon juice adds a nice little acidic bite…balance. It’s all about balance, Baby!
This combines flavors from both the English-speaking, as well as the Spanish-speaking Caribbean. The best of both flavor worlds.
This is the perfect foil for the Caribbean Pork Burger, but feel free to serve it with a pork roast, French fries, a wooden plank, steamed shrimp, grilled chicken or whatever you’re eating at the moment. It’s plain and simple, a great little sauce.
This is what I refer to as “a back pocket” recipe. It’s good to have this to fall back on and use frequently. This vinaigrette is wonderful drizzled over a salad that includes goat cheese and yellow/orange fruit. The color contrast between the goat cheese, the fruit and the vinaigrette is striking. And truly delicious.

This is so summery and delicious. It’s perfect with grilled chicken or fish, spooned over ice cream (I’m not kidding!), alongside some scrambled eggs…well, you get the point.
This is a nice, fruity and lighter version of cole slaw. In summer, I like to add mango, pineapple, peaches, or nectarines to cole slaw. I dress this version with a sweet chile vinaigrette, which compliments the fruit just ever-so nicely. It’s summery.
This is particularly delicious with fish, seafood or pork. The thing I like about this, is that even though it’s nice Thanksgiving side dish, it’s wonderful when fresh apricots are in season. It’s quick, easy and totally delicious.
This is one of those sauces that is as good with pork, as it is with chicken and it’s equally delicious with salmon or shrimp. Okay…so it’s good on pretty much anything. I haven’t tried it on a burger, but I think on a pork burger it could be stupendous.
