This image has an empty alt attribute; its file name is img_3539.jpgSicilian cooking is really fusion cooking.  The Moors were in Sicily in the 10th and 11th centuries, and they brought all kinds of good things, like, apricots, sugar, citrus, sweet melons, rice, saffron, raisins, nutmeg, clove, pepper, pine nuts and cinnamon.  This recipe is sort of an homage to the Moorish presence. This is a great little salad.  It’s pretty, it holds up well and it’s delicious.  Mandarins have just come into the market and they are wonderful.  I find, you can eat the entire being, peel and all.  And they’re gorgeous and just scream autumn. Continue reading →

Summer Delight Tuna Pasta Salad

This is a throw-back to my childhood.  On hot summer days (we didn’t have air-condition!), when my mother didn’t want to heat up the kitchen, she would make this in the morning, and put it in the fridge.  At dinner time, she would add it to chopped iceberg lettuce, along with thawed frozen peas.  It was so very good, at the end of a hot day.  Continue reading →
