Cheesy Rice with Tomatoes, Onions and Garlic

The Eldest Progeny, who is a creative and fine cook, told me about this recipe he found in Cook’s Country, and thought it sounded interesting and delicious. I didn’t have the recipe, so I winged it. It flew pretty well, I think.

I had some mini-pepperoni that just seemed like they would be a nice addition to some lean ground beef…I was thinking maybe a taco-like thing, but The Latin Lover said, “We haven’t had meatloaf in a while. I love meatloaf”…well, what more could a Goddess want to hear?
The Latin Lover worked through lunch, so we’re dining early tonight. The Goddess had needed a quick-fix. So pork chops over rice, that’s enriched with white wine and stock, as well as sautéed onions and mushrooms. Into the oven and about 30 minutes later…dinner!
I love tomato sandwiches. When the tomatoes are bursting with flavor, falling off their vines and are in great abundance, The Goddess is in heaven. But a Goddess doesn’t live by tomato sandwiches alone. No. No, she doesn’t. This is relatively quick and easy, particularly if you purchase one of those rolled up pie crusts…and they are quite tasty and work great for this recipe.
This is what I refer to as “a back pocket” recipe. It’s good to have this to fall back on and use frequently. This vinaigrette is wonderful drizzled over a salad that includes goat cheese and yellow/orange fruit. The color contrast between the goat cheese, the fruit and the vinaigrette is striking. And truly delicious.
Peas are taken for granted. They are served on the side of something else and well, they’re green and most people like them. You know, we really need to take another look at peas. This soup is superb for a hot summer night. It beautiful. It’s refreshing and more importantly, it is delicious.
The English-speaking Caribbean offers us some wonderfully complex flavors. Jerk Chicken is one of the dishes that’s synonymous with the islands. It’s has a nice kick of heat, is highly spiced and delicious. Thus, making it the perfect summer grilling dinner. You and your guests will love it.
The Goddess has never been all that enamored with chicken burgers per se. Having said that, these beauties are different. Chicken burgers tend toward the dry, but not these babies. They are jam-packed with flavor, and the Thai chili sauce and cucumbers add that sweet and extra crunch that is just ooooh! so lovely.
