I “discovered” black barley about five or six years ago.  Black barley is a different beast, than pearled barley.  It shares that somewhat nutty flavor, but it retains a delightful chewiness…texture, Baby!  Continue reading →

Summer Delight Tuna Pasta Salad

This is a throw-back to my childhood.  On hot summer days (we didn’t have air-condition!), when my mother didn’t want to heat up the kitchen, she would make this in the morning, and put it in the fridge.  At dinner time, she would add it to chopped iceberg lettuce, along with thawed frozen peas.  It was so very good, at the end of a hot day.  Continue reading →

Felix's Mélange de MariscosMélange, is defined as “a mixture, a medley”.  It’s the perfect description of this “medley”—as this combines, shrimp, scallops, calamari rings, and imitation crabmeat, for the seafood.  And the mélange of vegetables—red onion, olives, bell pepper, and recao or culantro.  It’s sublime.  It’s perfection…a mélange of flavors.  Continue reading →

Edamame, Corn, and Tomato Salad with HerbsIn my recipe box, this is called “Southern Confetti Salad”.  And it does look like confetti, doesn’t it?  But, that doesn’t really tell us much about this salad.  It is a great option for a summer picnic salad, as it’s both easy and can sit out for a bit.  But, it’s just as good in the dead of winter, with two feet of snow on the ground.  Did I mention that it’s also delicious?   Continue reading →
