Almost Marcella's Tomato Sauce with ButterMarcella Hazan was to Italian cuisine, what Julia Child was to American gastronomy.  They were both geniuses.  Both were practical, too.  They reveled in peasant food, and the clear flavors of simple ingredients.  This is based Marcella’s simple, tomato sauce…with a couple of small changes, of course!  Continue reading →

Tomato-Leek & Fennel Soup with LentilsI like lentils.  Actually, as far as legumes go, I think lentils may be my favorite.  The Latin Lover is, shall we say, less fond of them.  A bad childhood memory.  But I’m trying to convert him.  It’s always good to eradicate a bad childhood food memory and create a new, all-gown-up food memory!  I think this soup may have done it!   Continue reading →

Prairie Chili with BeansThe weather outside is frightful!  Chili is just this thing to take a bite out of the cold.  I know we’ve explored Chili with all the Good Stuff! in the past.  Though similar, this version is much closer to the chili my mother made, out there on the Prairie.  I make us sound like the Wilder’s from “Little House on the Prairie”, don’t I?  However, I don’t recall that they made chili!  Continue reading →

Layered, Roasted RatatouilleEvery now and again, you happen on a dish that’s just perfect.  This is that dish.  It’s a positively delicious dish.  It’s loaded with rich flavors and vivid colors.  Though it’s absolutely best made when the garden is overflowing, it transcends seasons.  And perhaps best of all, it goes together quickly and is even better made ahead and eaten at room temperature.  Continue reading →

Tomato-Herb Summer Salsa for BeefThis isn’t exactly a salsa in the Mexican-dip-for-tortilla chips sense, but more of an uncooked, chunky thick sauce…maybe a dressing?  But, no matter what you call it, it’s a nice change of pace and it’s delicious.  It’s great over a steak, on a burger or even on chicken.  This is just perfect for summer, when tomatoes come rolling in.  Continue reading →
