It’s chilly here in North Carolina. I think chillier than last year at this time. And that makes it perfect soup weather. And there’s something so comforting, and well, soul-warming about beef-barley soup. Get out the soup spoons and the good bread.
With flu season upon us with a vengeance, I thought this was a good time of year to make a brothy, vegetable soup. There are a few beans tossed in, but they were more of an afterthought. This soup is all about vegetables, is slightly salty and will warm you to your bones.
As you know, The Goddess does vegetables, but not really into the vegetarian thing. She loves her burgers, chicken and pork! But, sometimes a person needs to get outside their little world and wander a bit. This is what happens when she wanders off the beaten path….
At our home, mushroom soup is king. It’s pure comfort. I can’t believe I haven’t posted this before. I always have dried mushrooms in the cupboard, as well as porcini powder, so you can make mushroom soup whenever the mood comes over me.
The Spicy Honey loves his mushroom soup. Usually, he’s happy with the canned stuff, but this is so simple to make; it is really soooooo delicious. I thought I probably should share the recipe. Because, you need to make this.
This stuffing is savory, loaded with vegetables and herbs. You can add some sausage to this, if you wish, but it’s darn good without. You won’t miss the meat at all.
