We tend to overlook celery much too often.  Oh sure, we eat celery stick with Buffalo wings and on veggie trays with dips.  But they don’t really let celery shine, do they?  In this salad, celery has the starring roll. This is delicious for a dinner party and is best made several hours before serving.  Trust me when I tell you, your guests will want more! Continue reading →

Apple-Fennel & Bleu Cheese Salad

When autumn arrives, so do apples and pears.  In abundance.  Today, The Goddess is focusing on apples.  The varieties of older and new apples has positively exploded.  And that’s a delicious thing.  This salad is very close to a Waldorf Salad.  But, of course, The Goddess made a couple of changes.  This graces our Thanksgiving table almost every year.  Continue reading →

Back in the day when “cracker” was something you ate with soup or put cheese or peanut butter on, my mother used to make this salad.  I had completely forgotten about it.  Of course, there was no recipe that she left behind.  I was dicing a tomato and some scallions, and the memory of it came flooding back.  Thank goodness for food memories.
