Hasselback Tomatoes with Basil-Mozzarella Filling

We had a wonderful weekend with The Middle Progeny, The Unbound Reader, who were kind enough to interrupt their busy lives and bring our brilliant granddaughter to the Carolinas. After they left, the house seemed quiet…too quiet, so I rummaged around in the fridge and ran across some of the leftover
This is so summery and delicious. It’s perfect with grilled chicken or fish, spooned over ice cream (I’m not kidding!), alongside some scrambled eggs…well, you get the point.
Eggs, garden tomatoes, arugula and cloaked in a light mayonnaise sauce…what could be better to start off a meal? Or for lunch, with good bread? I was reminded of this bistro favorite, in an article in The New Yorker, and I’m so very glad it nudged my memory. This is a delicious way to kick off a summer meal, when the tomatoes are prime and the temperature peaks. 
This came together in no time at all. I was hungry for pizza. Really, more the flavor of pizza. Does that happen to you? Do you get hungry for certain flavors, too? Anyway, that what this was born of…the hunger for a flavor!
Every now and again, you happen on a dish that’s just perfect. This is that dish. It’s a positively delicious dish. It’s loaded with rich flavors and vivid colors. Though it’s absolutely best made when the garden is overflowing, it transcends seasons. And perhaps best of all, it goes together quickly and is even better made ahead and eaten at room temperature.
This isn’t exactly a salsa in the Mexican-dip-for-tortilla chips sense, but more of an uncooked, chunky thick sauce…maybe a dressing? But, no matter what you call it, it’s a nice change of pace and it’s delicious. It’s great over a steak, on a burger or even on chicken. This is just perfect for summer, when tomatoes come rolling in.
Seven Layer Dip has been around for years, and with good reason. It’s delicious. It’s easy and it’s delicious. It goes together in a flash and it’s delicious…are you seeing a pattern here? But, seven layers is just a tad too limiting for The Goddess….
Panzanella or Fattoush? That is the question. In reality, they are pretty much the same salad…and yet, not. That makes no sense, does it? At their roots, they are both bread salads, with good veggies tossed in. But it is all about the bread or the pita, and with this version, you don’t have to choose between the two…Fattoush-azella!
