Terrific Tartar SauceThe Goddess loves mayonnaise and tartar sauce is just so good.  If she didn’t like fish as much as she does, tartar sauce alone would be reason enough to eat fish!  Continue reading →

Seafood Hot Pot RevisitedWe visited Han Restaurant again.  Those Hot Pots are addictive, I tell ya’.  Well, we had some of the broth leftover and you know how The Goddess loves her leftovers.  We decided to “re-purpose” it a bit, so we made a fish stew.  Continue reading →

Tuna-Avocado CevicheYesterday The Goddess very pointedly told you not to use oily fish for ceviche.  Clearly, she’s not to be trusted.  Because today, here she is, using tuna in ceviche.  So, it turns out that tuna (and I have used salmon—horrors!) is really quite lovely in ceviche.  Continue reading →

Touch-of-Spring CevicheWith the heat of summer around the corner, and sort of already here in South Florida, (though it is raining today) I decided it was time to make ceviche.  Ceviche is probably the quintessential summer (read “hot weather”) dish.  But, the thing is, it is barely springtime, so I thought some spring fruit might be a nice addition.  Maybe even some diced sugar snap peas or asparagus…. Slow-Roasted Tilapia with Leeks and CapersTexture.  This is all about the texture…pure silk on the tongue.  The flavor is wonderful, but the texture is positively silky.  Divine.  I kid you not.  Slow-roasting makes for a moist and silky finish.  Continue reading →

Roll-Your-Own Sole Filled with Spinach Drizzled with Brown ButterThe Goddess does so love creamed spinach…maybe it’s that “Green Goddess” thing.  Who knows, but love it, she does (that sounded eerily like Yoda…hmmm).  Brown butter is lovely with fish.  It’s rich and nutty and just plain wonderful.  So this fish encompasses many favorites, it doesn’t take long to prepare and bake, either.  And it looks mahhhvelous!  Continue reading →

Salmon with Greek FlavorsI’ve been thinking about Greek flavors recently.  Who knows why?  Maybe it’s the warm weather.  Those flavors—oregano, lemon, garlic, just seem so say, “Summer is here”.  And salmon is the perfect foil for these flavors. Continue reading →

Tuna-Caper Mousse on Toast with Avocado SlicesThis is a great little appetizer to whip up at a moment’s notice.  Smear it on a bland, buttery cracker, and you think it’s perfect.  But stuffed into one of the little sweet-hot round peppers that you can find on the olive bar…you know the ones, it’s stupendous.  Continue reading →
