I just ran across a recipe for Chicken Mole Casserole on the Food & Wine website.  And I do mean I “just” found it.  It sounded great; I liked the idea of it.  It just seemed like the perfect thing for dinner, so I made it, or rather my version of it. This is one of those totally self-indulgent dishes…well, self-indulgent for me.  I love fried rice.  White rice you can keep, except to act as a nice fluffy, feather bed to be blanketed with a great sauce.  This is a version of an after-work meal that I dream of.  It’s the sole reason The Goddess makes extra rice.  Continue reading →

A cast iron skillet, pizza dough, toppings, a jug of wine and thou!  I made this for lunch in under 10 minutes…I had to prepare the toppings, you know.  Pizza done this way is so simple, and you get a nice crispy crust without heating up the whole house or BBQ-ing in 100ºF heat.   Continue reading →

141Okay, these aren’t necessarily “baked” beans.  They can be, if that’s what you want to do and you have the time.  Otherwise, make this “quick and dirty” version in about 20 minutes.  They have tons of flavor and if you toss some cut-up hot dogs into the mix, cook some rice, add a tossed salad or green veggie, you can have dinner on the table in under 30 minutes.  Continue reading →

Today, when I got the first real vine-ripened tomatoes, I knew EXACTLY what to make.  Tomaquet is to Spain, in particular, to the Catalan, what bruschetta is to the Italians.  Ask any Spaniard about tomato bread and they will get a faraway look in their eyes and wax on about tomaquet for, at the very least, 15 minutes.  Continue reading →
