Mexican Restaurant-Style SalsaI love salsa.  I think most people do.  I love it on good tortilla chips.  Good salsa pure, simple, with just the right balance of flavors.  The thing is I’m picky about my salsa.  I don’t like the watery version you get from using fresh tomatoes.  Nor the thick, gloppy version that takes over the whole chip.  Both of these seem to be de rigueur in many jarred, and so-called “fresh” salsas in supermarkets and many restaurants, Mexican or otherwise.  So I decided to do something about it.  Continue reading →

028The key to really good tuna, is to purchase the freshest tuna you can and then, not over-cooking them.  They should be red in the very center and pink at the very least, with no more than 1/4-inch edge of doneness, less if possible.  The truly wonderful part of all this is, tuna steaks can be cooked and on the table in less than 10 minutes!  Continue reading →

042 - CopyIt’s all about the sauce.  And this is a fantastic version, the Russian Sable of Fudge Sauces.  This is THE Fudge Sauce.  Okay, so you get that it’s really good, right?  The Flying Librarian makes a hot fudge that may, may be even better than this, but she refuses to give me the recipe…some nonsense about swearing on her son’s life, so she won’t give out the recipe.  Sometimes you just have to take the risk.  It’s fudge sauce.  Is she kidding?  Continue reading →

Strawberry Sauce with Pink Peppercorns and Ice CreamI’m guessing that you’re thinking The Goddess has plunged deeply off the edge of the earth, which most rational, sane people can make a case for on any given day anyway.  But you really do have to try this.  It is surprising and surprisingly delicious.  With local berries in season, it’s the perfect time of year for this sauce, which is as good drizzled over grilled chicken as it is over good vanilla ice cream.  Continue reading →

Orange-Mint ChimichurriChimichurri is to Argentina what pesto is to southern Italy.  I mean it is really about the same thing.  Chimichurri, (and isn’t that just fun to say?) is usually chopped herbs, languishing in a lovely pool of good olive oil, rather than the more emulsified pesto.  This is a drizzle sauce….  Continue reading →
