I love fritters. They’re a great way to use veggies. They’re a great way to use up leftover veggies and they’re fried. And anything fried is just better. Face it. It’s true. You know it’s true.
This is a dish my sister Joan used to make. She’s no longer with us, but her memory lives on with me in so many ways. This dish is one of the things she made for her large family and her busy life. It was fast, tasty and economical. What more could you ask for?
There’s Hasselback Potatoes, so why no carrots? These are a nice side, they can be partially prepared ahead of time and are pretty. Oh, yeah. Did I mention they’re also really delicious?
