Heathen Gypsy Soup

024I know we’re supposed to be done with soups, but the snow is coming down by the bushel, there’s already 10 inches (25cm) on the ground and it’s still coming down.  Therefore,  being the benevolent Goddess that I am, I’m giving you 2, count ’em t-w-o, recipes today.  The first is yet another soup, but it’s nice and simple.  I have no idea why I called this Heathen Gypsy Soup…maybe because the ingredients in this soup would be readily available anywhere and would make it easy to prepare, given the nomadic qualities of the gypsy life-style.  Who knows on what level The Goddess’s mind operates (or doesn’t!)?  Anyway, I just ate a bowl for lunch and decided it was worth sharing after all.  It’s really just a good, straight-up vegetable soup.  You roast the vegetables (around the campfire where you are singing and dancing and doing other gypsy things…no stereo-types here, huh?), then make the soup.  Or better yet, use leftover roasted vegetables from last night’s dinner and cut the cooking time in half.  It’s a win-win either way.  The real key to this soup, is to simply use whatever vegetables you have lurking in your fridge.  Continue reading

Blondie Bars and Variations

003I felt after the lean Heathen Gypsy Soup, you needed something to snarf down that  would put some staying power into that snow shovel.  So here’s the second posting for today.  Enjoy these.

Don’t you just love making bar cookies?  They are delicious and usually they go together so easily that you can make them before you go to work.  Blondies are one of the best bar cookies.  They are a cross between brownies and chocolate-chip-type cookie batter.  They are dense, sweet, chewy, moist and rich…they are decadent and you simply cannot eat just one.  Remember…life is short.  Have the second blondie…. Buffalo Chicken Pasta

I have a confession.  I’ve never been that big a fan of buffalo chicken wings.  I don’t know why, but I was always more interested in the celery and bleu cheese dressing.  I love bleu cheese; I’m weird that way.  With Super Bowl looming on the not-too-distant horizon, I got to thinking about other possibilities and this is what I came up with…Buffalo Chicken Sauce on Pasta.  Continue reading

Chili with all the Good Stuff!

060There are as many types of chilis as there are…well, chiles.  My version of chili has come together from different sources and the amounts given are flexible.  This is pretty much the core, or the “bones”, of the chili I’ve been making for years.   As I’ve discovered new flavors along the way, they’ve found their way into the soup pot.  Some have stayed, some have wandered off to return later and some have run away, screaming, never to return.   I add beans; we like beans in our chili, but if you don’t, then leave them out.  Chili is perfect for large get-togethers like Super Bowl parties…make a chili bar! 022Corn chowder can be served as is…a soup that focuses on corn, creamy or brothy, herby or not, etc.  Or it can be the base for clams, salmon, seafood, chicken, ham, etc.  It’s a very versatile meal.  Have corn chowder on Monday and with just a few additions, clam chowder on Wednesday.  Continue reading

Sour Cream Cornbread

018One does not live by soup alone.  Cornbread is a natural to serve with soups.  This is a light, cakey-type of cornbread with a great flavor and a tender crumb.  And it’s easy.    It has many variations, but most of all…it’s delicious!  Continue reading

Québécois-Style Pea Soup (Soup aux Pois)

Tags

023Pea soup is winter in French-speaking Canada.  The pot is always on the stove and the more you reheat this soup, the better it tastes.  It keeps the freezing cold at bay, is very economical to make, is filling and plain and simply put…it’s good.  Continue reading

Midwestern Cauliflower-Cheddar Soup…with a Twist!

There are as many versions of cheese soups as there are brands of beer…well maybe not quite THAT many versions.  This version uses a lager/apple cider reduction, potato and cauliflower as part of the ingredients.  It’s yummy and creamy, like it should be, but there isn’t as much added heavy cream (or no cream at all, if you so choose), therefore we cut some calories, still have the creaminess we adore and add lovely flavors, too.  Continue reading

The Reuben

Tags

033Reuben sandwiches are a favourite.  They are salty, meaty, with a hint of sweet from the Russian dressing and a hint of sharpness from the sauerkraut.  Few places make a good Reuben sandwich.  The good news is, they are very easy to make at home.  Continue reading

Leftover mashed potatoes?  What a perfect and perfectly quick way to make soup for dinner.  Potato soup is a blank canvas.  There are so many variations, it’s hard to choose.  It can be eaten cold or hot; we definitely want it hot today!  It’s creamy comfort, with or without the cream.  Continue reading
