These peanut noodles are creamy and thick and just plain good. This is one of those recipes that is pretty flexible, depending on your taste…so adjust away!
This was a quick-fix if you happened to bring home some char siu pork or (Chinese BBQ pork) from the Asian market. And you really should do that. It’s good stuff and good to have on hand, if for no other reason than to make this wrap. It was deeeeeeeeeeelicious!
Think of this cole slaw as a “monsoon” of tropical flavors…pineapple, mango, orange…need I say more? Okay, maybe I do, but you’re going to want to slap this on some fish tacos or anything seafood-y. Or just have it for breakfast.

With the heat of summer around the corner, and sort of already here in South Florida, (though it is raining today) I decided it was time to make ceviche. Ceviche is probably the quintessential summer (read “hot weather”) dish. But, the thing is, it is barely springtime, so I thought some spring fruit might be a nice addition.
