Prairie Chili with BeansThe weather outside is frightful!  Chili is just this thing to take a bite out of the cold.  I know we’ve explored Chili with all the Good Stuff! in the past.  Though similar, this version is much closer to the chili my mother made, out there on the Prairie.  I make us sound like the Wilder’s from “Little House on the Prairie”, don’t I?  However, I don’t recall that they made chili!  Continue reading →

Meatloaf RomanaI forget about meatloaf and I don’t know why.  We love it.  It’s goes together quickly.  It practically bakes itself and damn, it’s just so delicious.  And best of all, it makes great sandwiches.  I’ve already given you Roadhouse Meatloaf, but you should have this one, too.  Continue reading →

Cheeseburger & "Fries" CasseroleWho doesn’t love a good cheeseburger?  And nice, crispy fries?  So, The Goddess was thinking this might just work in a casserole.  You know how she’s into these one-dish or skillet dinners.  Many time when she thinks something will work, it doesn’t work as well as it does in her mind’s-eye.  But, this turned out to be incredibly, almost indecently, tasty.    Continue reading →

Beef, Potato and Green Bean Skillet DinnerThis is a dish my sister Joan used to make.  She’s no longer with us, but her memory lives on with me in so many ways.  This dish is one of the things she made for her large family and her busy life.  It was fast, tasty and economical.  What more could you ask for?  Continue reading →

Picadillo with Black Beans and Ripe PlantainsPicadillo is a favorite of The Latin Lover and the Progeny.  We like it a bit on the soupier side, because we serve it with or over rice and usually black beans and fried ripe plantains (maduros).  So The Goddess decided to throw caution to the wind and combine these flavors.  I mean, why not? The Hot Mess Cheeseburger with a Crispy "Collar"I know I’ve said eggs were the perfect food, but burgers are pretty high up on that list, too.  And today is National Cheeseburger Day, so here we have the perfect burger with a crispy, lacy “collar” of cheddar.  This is a serious burger and with crunch! Cuban Frita with Shoestrings and Salsa CremosaThat’s right…those Cubans even have their own version of a burger…the Frita.  This is a burger made with pork or a combination of beef and pork, seasoned, fried, placed on a bun, drizzled with a creamy sauce and shoestring potato sticks all over the top.  I’ll just let you think about that for a moment…. Pastel de Picadillo CubanoIt’s the time of year when the buffet table is front and center for many celebrations. At least at The Goddess’s house, it is.  And The Latin Lover has been eating all sorts of good Cuban food in Miami and he’s returning for the holidays…his gift to me, whether he knows it or not!  This Pastel de Picadillo Cubano is perfect for him. Have you ever noticed that everybody’s mother either makes great meatloaf or terrible meatloaf.  It seems there’s no in-between.  This is great meatloaf; it’s juicy, full-flavored with just a bit of sweetness and it makes kick-ass sandwiches the next day. Continue reading →

060There are as many types of chilis as there are…well, chiles.  My version of chili has come together from different sources and the amounts given are flexible.  This is pretty much the core, or the “bones”, of the chili I’ve been making for years.   As I’ve discovered new flavors along the way, they’ve found their way into the soup pot.  Some have stayed, some have wandered off to return later and some have run away, screaming, never to return.   I add beans; we like beans in our chili, but if you don’t, then leave them out.  Chili is perfect for large get-togethers like Super Bowl parties…make a chili bar!
