Before-The-Storm SoupThis is a chunky soup.  It’s full of good vegetables and morsels of meat and like all good soups, it’s adaptable.  Use what you have on hand, but today’s version worked out so well, The Goddess, being the benevolent deity that she is, decided to share, because the weather could turn at any moment!  Continue reading →

Sicilian Fish with Caramelized Oranges, Tomato, Capers, and OlivesIs this really Sicilian?  Perhaps, if The Goddess lived in a Sicilian village she would be making this dish, with many of the flavors—tomato, capers, olives, garlic, orange (there it is again!) and some fennel—that are so prevalent in Sicilian cooking.  This turned out to be delicious, so she will be making this frequently.  Continue reading →

Pan-Fried Red Snapper with Citrus-Cilantro Beurre BlancThis is The Goddess’s first posting from rainy South Florida, and what better meal than red snapper and shrimp with a great sauce?  (Did I mention, it’s all about the sauce?  I did…oh, okay!)  I had forgotten how often it rains here, but that did not dampen our dinner, the first one together in our little furnished apartment…it’s like we’re newlyweds again!  Continue reading →

When The Middle Son and The Unbound Reader joined forces, their wedding brunch was catered by The Red Blazer in Concord, NH.  They make a Breakfast Lasagna, that had all of us tripping over each other to get another piece.  We had all moved on from the real reason we were there.  We were all there for the Breakfast Lasagna!  Continue reading →

Stuffed Pork Loin with Espresso-Cider GravyBoth of my parents long ago left this world for the big farm in the sky.  They had a good life, a long life and they were pretty happy people.  It doesn’t get too much better than that.  Anyway, yesterday would have been my father’s birthday and today would have been my mother’s birthday.  So my thoughts turned to pork.  In my family, food was much bigger than any gift.  It was the gift.  And pork was always there.  Continue reading →

Roasted Butternut, Brie and Caramelized Onions en CrouteThis came about because there’s a great sandwich at The Kitchen, which is in the lobby of the Hartford Public Library.  It’s part of Billings Forge Community Works and indeed, they do good great things with the community.  Please check out their website.  But, The Kitchen is a bright and lovely place to grab a bite for lunch.  They have some great offerings, but, “The-Butter-Me-Up” grilled sandwich is what inspired this “croute”.  Continue reading →

Everyday Salad Dressing MixNeed a last minute gift from your kitchen for someone special?  You’ll have most of these ingredients in your cupboard to make this great mix to make a nice flexible vinaigrette.  You might want to include a pretty bottle, with a tight-fitting lid, that’s reusable.  It’s a tasty little stocking-stuffer. Beef Stew with DumplingsWith autumn deeply upon us, cozy, comfort food is so welcome.  For the Goddess, dumplings are a homey-comforting-cold-weather sort of meal.  These are not the meat-filled Asian variety, nor the biscuit-type Southern variety, nor the firm German potato dumpling.  No, these are the light, fluffy-type of dumplings.  A cloud of goodness sitting atop a mound of, in this case, beef stew.   Continue reading →

Mashed Potato Perfection

I posted this last year, but I think it’s work repeating, because well, it’s that time of year and we’re talking mashed potatoes…pure comfort food.  They are smooth, creamy and soft, the perfect foil for butter or gravy.  Potatoes are incredibly nutritious and by themselves relatively low cal; it’s the stuff we add that run up the calorie count, but…these are guiltless.   Continue reading →
