Island Spiced Pork Roast with Orange-Guava-Beer and Onion SauceAllspice, guava, orange, beer and a pork butt…it’s a marriage made in the heavens.  Truly it is.  This was the perfect meal to cook in the pressure cooker.  Yes, The Goddess has a new toy.  Continue reading →

The Teriyaki BurgerI love and adore The Spicy Honey and The Progeny.  From a culinary standpoint…I love and adore burgers.  All of them.  Every iteration I’ve ever eaten.  This one is a favorite.  It’s good rain or shine, winter or summer, for dinner or breakfast.  Continue reading →

Teriyaki Burger SauceBurgers….MMMMM!  The Goddess loves her burgers.  You can keep filet mignon (except for the Bordelaise sauce) or NY strip (except for the béarnaise sauce—I’m seeing a theme here!), but don’t take away her burgers.  She bites the hand that does that.  But, this is about the sauce.  Just as it should be. Salmon & Tuna TartareThis is a terrific lunch or first course.  I serve it as is, or smeared on crackers or toasts.  It’s delicious, light, and has a lovely texture; sort of silky on the tongue.  If you like sushi, you’ll love this mixture.  Continue reading →

I just ran across a recipe for Chicken Mole Casserole on the Food & Wine website.  And I do mean I “just” found it.  It sounded great; I liked the idea of it.  It just seemed like the perfect thing for dinner, so I made it, or rather my version of it. And it was on the table in 20 minutes!  What a great weeknight or Friday-night-after-work-instead-of-pizza dinner!  Continue reading →

This is one of those totally self-indulgent dishes…well, self-indulgent for me.  I love fried rice.  White rice you can keep, except to act as a nice fluffy, feather bed to be blanketed with a great sauce.  This is a version of an after-work meal that I dream of.  It’s the sole reason The Goddess makes extra rice.  Continue reading →

Roasted Kung Pao Chicken Thighs with Stir-Fry Vegetables and Ginger RiceYou realize that The Goddess thinks about food and food preparation all the time.  It’s sort of an obsession.  She’s not normal, I tell ya’.  She’s always pondering about the “what if’s” and the “why for’s”, the culinary road less, or not at all traveled!  Recently, Chinese food has been on her mind; she was thinking about Kung Pao Chicken.  That’s what prompted this culinary adventure.  Continue reading →

028The key to really good tuna, is to purchase the freshest tuna you can and then, not over-cooking them.  They should be red in the very center and pink at the very least, with no more than 1/4-inch edge of doneness, less if possible.  The truly wonderful part of all this is, tuna steaks can be cooked and on the table in less than 10 minutes!  Continue reading →

006You may have heard that The Goddess loves sauces.  We’re talking any type of sauce, but she does have a special little spot in her heart for mayonnaise or creamy-type sauces.  This sauce is one of THOSE sauces!  It’s wonderful with Tuxedo Tuna, on a Bahn Mi or Grilled Thai Pork Burgers.  Continue reading →

044Americans so often use ground beef or hamburger when we do burgers, but pork is a wonderful option.  You know how The Goddess likes pork.  So today she was feeling something Thai and fast.  So she fired up the grill, seasoned some ground pork and the Thai Burger was dinner! Continue reading →
