This should probably be called a salsa. But then most people conjure up a flavor profile of tomatoes, onions, peppers, with maybe a bit of fruit tossed in. That’s not this…at all. Once you’ve eaten freezer jam, you’ll never go back. The color is spectacularly red and sparkling, but the flavor is unbelievable. Smearing some strawberry freezer jam (or preserves) on a scone, on Christmas morning, is the best Christmas gift you can give yourself or your family. Make room in your freezer…. 
It’s spring. Finally! I did think it might not arrive. And with spring comes fiddleheads, ramps, asparagus, and strawberries. I was in the local supermarket and they had a sample of a goat cheese salad with roasted strawberries. It was good, but the strawberries were, shall we say, lacking…it’s a texture thing. But I liked the idea of roasted strawberries, so I decided to make a vinaigrette with them.
This is one of those lovely concoctions that’s so refreshing you want to eat the whole bowl yourself (don’t think I haven’t done that once or twice!). It is as beautiful as it is delicious, and nutritious, too. What’s not to love?
I purchased some lacinato kale the other day. I know. I know. I’ve ranted about how tired I am of kale in everything, but chocolate pudding. And I am tired of it, but I’m a puzzle. Okay? I do enjoy sautéed greens every now and then.
It’s always good to have a nice dessert sauce in your repertoire. This is absolutely spectacular made with local berries, when they’re in season, like right now. And you must slice the berries, sprinkle them with a bit of sugar and that’s all you need. But, some years, the berries aren’t quite as sweet.
Does anyone really need a recipe for fruit salad? Probably not, but I’m giving you one anyone, just in case! This is a particularly nice combination of flavors, and it’s pretty. The lime juice and chile flakes go so very nicely with the fruit. Does that surprise you?
With the heat of summer around the corner, and sort of already here in South Florida, (though it is raining today) I decided it was time to make ceviche. Ceviche is probably the quintessential summer (read “hot weather”) dish. But, the thing is, it is barely springtime, so I thought some spring fruit might be a nice addition. Maybe even some diced sugar snap peas or asparagus….
It’s almost strawberry season. I’m impatient. So, I purchase supermarket strawberries, just to get myself in the mood. They are almost always a disappointment, but oddly enough, even those work reasonably well with this lovely springtime dessert.
