The other day is was lunching at a local restaurant, and their daily special was a pork schnitzel sandwich, topped with their applesauce aïoli. It was really quite a lovely combination, so I decided it was time to explore the rich deliciousness, that is an aïoli. And then there’s the alliteration thing, Applesauce-Allspice Aïoli. What can I say? Continue reading

This stuff is unbelievably delicious. Spoon-over-the-sink kind of delicious. The simplicity of the mixture just doesn’t jive with the amount of flavor you experience. It’s a perfect foil for steak, grilled chicken or pork or salmon. Or an Asian-inspired Sloppy Joe! You have to make this sauce.
Aïoli is something you need to know how to make. It’s a basic mayonnaise, but with a good hit of garlic. I don’t tend to make aïoli from scratch, because it doesn’t keep as well, as it contains raw egg yolks. This version, which used purchased mayonnaise, keeps well, is more stable and is just plain delicious.
Moment of truth? This is really a garnish. In actuality, it’s a garnish that’s a relish, but “Condimento Picado” just sounds so much better than “Minced Relish”, doesn’t it? This is a perfect, tailor-made quick garnish/relish to add a punch of flavor to almost any plain, or simply prepared, protein.
This is a nice alternative to tartar sauce. It’s wonderful served on the side of a grilled salmon filet….mmmmm! I usually serve this with
We’ve already talked about the spectacularly delicious tea, Lapsang Souchong Oolong. It’s smoky and makes an interesting cup of tea. But, I like to use the tea for cooking. It is just the perfect addition to this simple dry rub for meat. You can use it on other things, but it positively sings on beef…we’re talking a full-fledged aria.
‘Tis the time of year, and as you know, The Goddess loves her cranberry sauce. She loves homemade cranberry sauce. She loves the stuff in the cans, too. She’s been pining for cranberry sauce for months, so she began by making a double batch. Hey, cranberries are only around for a short time, but cranberry sauce can be forever! Well, almost….
I always like to have a few jars of Hot Pepper Jelly on hand, particularly during the holiday season. Hot Pepper Jelly is always an appreciated hostess gift. It’s so versatile. I love to have a bit on a cheese tray, perfect with a leg of lamb, or on a grilled cheese sandwich. It’s a really nice glaze for chicken or pork, too. Are you getting the impression this is a versatile sauce to have in your pantry? You would be right….
Anyone you knows The Goddess, knows that her refrigerator is always bursting at the seams. The reason? One word…condiments. Condiments and sauces are where it’s at. It’s such a luxury to have jars of sauces, relishes or chutney tucked away, just waiting to be smeared on crackers, or added to a grilled cheese. Or serve alongside your Thanksgiving turkey, which is a nice change from, or in addition to, cranberry relish.
This condiment, Sambal Mahtah, is spectacularly delicious. It’s spicy, sweet, a little hot and just slightly crunchy. This came to my attention via Trader Joe’s™. They sell some amazingly delicious products, but they discontinued their Sambal Mahtah. Well, what’s a girl to do? She needs to come up with her own version.
