Just recently it was Key West shrimp season in South Florida. These little beauties have an incredible flavor and texture. And the bonus, they come the way they were created, with the head-on, feelers included! They are just too fun, don’t you think?
That’s right…those Cubans even have their own version of a burger…the Frita. This is a burger made with pork or a combination of beef and pork, seasoned, fried, placed on a bun, drizzled with a creamy sauce and shoestring potato sticks all over the top. I’ll just let you think about that for a moment….
This is my version of “special sauce”. It’s great on burgers, steamed or roasted veggies, potatoes (yeah, I know they are veggies, too), roast beef and Reuben sandwiches, too. It’s a great dip, too.
First, let’s get something straight. The Goddess loves chicken salad. She’s never met one she didn’t like, except for that one with chocolate chips in it. It turns out that chocolate doesn’t make everything taste better!
This is a terrific lunch or first course. I serve it as is, or smeared on crackers or toasts. It’s delicious, light, and has a lovely texture; sort of silky on the tongue. If you like sushi, you’ll love this mixture. 
Fennel and fish are terrific together. The sweetness that develops when you sauté fennel is a beautiful thing. And it just works so well with fish…this one is a corvina fillet. The Goddess just had to add a bit of orange zest; you know how she is.
When your guests taste these Green Eggs and Ham, you will be the envy of all who enter your home….MMMmmm! These “green” eggs, wander a bit off the beaten path, but what flavor. I think this version might surprise you…in a very tasty way!
This is a chunky soup. It’s full of good vegetables and morsels of meat and like all good soups, it’s adaptable. Use what you have on hand, but today’s version worked out so well, The Goddess, being the benevolent deity that she is, decided to share, because the weather could turn at any moment!
