When autumn arrives, so do apples and pears. In abundance. Today, The Goddess is focusing on apples. The varieties of older and new apples has positively exploded. And that’s a delicious thing. This salad is very close to a Waldorf Salad. But, of course, The Goddess made a couple of changes. This graces our Thanksgiving table almost every year. Continue reading



This is a wonderful, little-black-dress type of dessert. Everyone should have this in their repertoire. It goes together quickly, it’s comfort-food delicious, it keeps and it’s more than a dessert. It’s damn fine for breakfast!
Small meatballs are a great tapa. This is a really nice blend to form into patties for breakfast sausages, either with or without the mustard-cream sauce…though, you know…it’s all about the sauce! Or it should be.
The mixture of onions, apples and mushrooms is a winning combination. I love this combination with pork or roasted chicken. This is particularly nice, because you can make it ahead and reheat it. I think it’s even better reheated, making it perfect for company. And, this compote positively screams autumn!
When I made this there was a hurricane brewing out there in the Atlantic. And it hit North Carolina. It hit hard near the coast. Sadly, there are far too many people who suffered terrible loss at the hands of Mother Nature and will continue to deal with the devastation left in the wake of Flo. We were very fortunate that Flo changed her mind and lost some steam by the time she arrived inland. But, life goes on and you have to keep up your strength to brave the elements and repair the damage done.
I love fennel. I love it raw, but when it’s roasted or sautéed…mmm…it’s just superb. So many times I’ve heard people say they don’t know what to do with fresh fennel. This is a perfect marriage…fennel and apple. There’s no fighting here!
Anyone you knows The Goddess, knows that her refrigerator is always bursting at the seams. The reason? One word…condiments. Condiments and sauces are where it’s at. It’s such a luxury to have jars of sauces, relishes or chutney tucked away, just waiting to be smeared on crackers, or added to a grilled cheese. Or serve alongside your Thanksgiving turkey, which is a nice change from, or in addition to, cranberry relish.
This is a simple, rustic dessert. Comfort food. It has a good apple flavor, held together by a cakey pudding. Sort of a cross between apple pie and cake-like pudding. Pure comfort.
