This should probably be called a salsa. But then most people conjure up a flavor profile of tomatoes, onions, peppers, with maybe a bit of fruit tossed in. That’s not this…at all. I’m serving this with very simply prepared fish, but it’s all about the fruit mixture. I could seriously eat the whole bowl. Just standing there, leaning up against the cupboard…it’s that good. I saw this on a Facebook page I follow. It looked so delicious and we haven’t had chicken. My version is based on a
You know how The Goddess is always going on about leftovers, right? Well, she decided that it might be helpful, if she posted some of the things she does with her leftovers. This Chicken Salad uses leftover
I’ve been thinking about Indian food recently. Obsessing really. This is what usually sends me off on a recipe search. Picture The Goddess, crawling in camo through her jungle of cookbooks and the Inter”Webs”, in search of ideas. That’s an image, isn’t it? In this case, there wasn’t really a search. It just sort of came together, and I had leftover shrimp and lobster…see how that works?
The Brazilians add corn to things. We don’t usually add corn to our hot dogs, but they do…Yup, hot dogs. As well as, those yummy little potato sticks. So, this is different, but it is a wonderful version of chicken salad. It’s creamy, has a nice pure flavor, a little crunch at the end. It’s just flat-out delicious.

They are jam-packed with flavor, and the Thai chili sauce and cucumbers add that sweet and extra crunch that is just ooooh! so lovely.
I’m sorry I haven’t posted anything recently, but my trusty laptop crashed. I couldn’t believe it, but such is life. So I have a new laptop and I’m up and running again, so I promise to make it up to you. And this recipe is the perfect way to begin. The mojito is a staple Cuban libation. This sauce is a keeper, even for those that think they aren’t crazy about mint.
This is a nice alternative to tartar sauce. It’s wonderful served on the side of a grilled salmon filet….mmmmm! I usually serve this with
This condiment, Sambal Mahtah, is spectacularly delicious. It’s spicy, sweet, a little hot and just slightly crunchy. This came to my attention via Trader Joe’s™. They sell some amazingly delicious products, but they discontinued their Sambal Mahtah. Well, what’s a girl to do? She needs to come up with her own version.
Think of this cole slaw as a “monsoon” of tropical flavors…pineapple, mango, orange…need I say more? Okay, maybe I do, but you’re going to want to slap this on some fish tacos or anything seafood-y. Or just have it for breakfast.
