When you put out a bowl of good olives, they always seems to disappear quickly, don’t they? When I put these little orbs of tastiness out to nibble, with drinks, before dinner, they fly out of the bowl! If you’re lucky enough to have some left, they are mighty delicious strewn over a salad. With the heat of summer around the corner, and sort of already here in South Florida, (though it is raining today) I decided it was time to make ceviche. Ceviche is probably the quintessential summer (read “hot weather”) dish. But, the thing is, it is barely springtime, so I thought some spring fruit might be a nice addition. Maybe even some diced sugar snap peas or asparagus….
It’s almost strawberry season. I’m impatient. So, I purchase supermarket strawberries, just to get myself in the mood. They are almost always a disappointment, but oddly enough, even those work reasonably well with this lovely springtime dessert.
Chimichurri is a great sauce for both steak and seafood. Actually, this version, would make a chunk of wood palatable! It’s pretty decent on almost anything, like potatoes (either sweet or regular), roasted parsnips, carrots or cauliflower…like I said, almost anything.
I picked up a bag of broccoli slaw, when the store was out of regular slaw. I’m so glad I did. I love the stuff, but The Goddess has never met a piece of broccoli she didn’t love. There must be a little Italian blood in her veins, rather than the rumored ice water.
This is, at its heart, the shrimp bisque you’re familiar with. But I was feeling the Carnaval vibe, given the time of year, and the shrimp looked so tasty, so I decided to jazz up the regular old bisque with some Brazilian flavors. It worked. And The Spicy Honey loved it. Lent won’t be all about sacrifice, after all!
I was going to call this Tropical Cranberry Sauce, but that’s way too vague. And I want you to try this. It uses some of the most wonderful flavors of the Tropics, but still retains a familiarity to the more traditional version.
Allspice, guava, orange, beer and a pork butt…it’s a marriage made in the heavens. Truly it is. This was the perfect meal to cook in the pressure cooker. Yes, The Goddess has a new toy.
First, let’s get something straight. The Goddess loves chicken salad. She’s never met one she didn’t like, except for that one with chocolate chips in it. It turns out that chocolate doesn’t make everything taste better!
Fennel and fish are terrific together. The sweetness that develops when you sauté fennel is a beautiful thing. And it just works so well with fish…this one is a corvina fillet. The Goddess just had to add a bit of orange zest; you know how she is.
