I always like to have a few jars of Hot Pepper Jelly on hand, particularly during the holiday season. Hot Pepper Jelly is always an appreciated hostess gift. It’s so versatile. I love to have a bit on a cheese tray, perfect with a leg of lamb, or on a grilled cheese sandwich. It’s a really nice glaze for chicken or pork, too. The Goddess absolutely adores condiments. At any given time, her fridge is bursting at the seams with such wonders. Relishes, chutneys, preserves, and pickles add something truly wonderful to sandwiches, a charcuterie platter, toast, meats or simply eat it with a spoon.

I probably shouldn’t be calling this Sicilian Eggplant, since I’m not only not Sicilian, hell, I’m not even Italian. This may seem like it has non-Italian flavors, but we need to remember that the Moors “visited” Sicily for quite a number of years. Therefore, this has many of the flavors they left behind, after they moved on. You know, things like raisins, pistachios and cumin. It matters not what those flavors are, it’s still darned delicious.
