This is a summer salad if there ever was one. It’s perfect when the temperature soars, as it’s been doing here in the Carolinas, so this seems like the perfect dinner, giving me a delicious, quick, cold meal loaded with flavor, giving me just that little extra time I need to unpack more boxes…Yippee!!! I really do so enjoy imitation crab meat. I know it’s not crab meat. I just like it. It’s never fishy when it’s heated. It has a nice consistency, it’s easy to work with and it just tastes so good. And it was really good in these patties.
Flavored hummus seems to be all the rage these days. And with good reason. It’s very tasty stuff. Peas and mint are a natural combination. The lovely cool green just screams summer.
This is a gluten-free cake and if I didn’t tell you that, I doubt if you would realize it. It is delicious, moist and just slightly dense, but in a good way. This is from the King Arthur Flour™ website, with just a couple of minor additions…citrus zest!!!
I love Boursin™ cheese, and I make a pretty decent facsimile,
I know you’re groaning about now…oh, no! More citrus…at least this time it’s lemon. And this is using my favorite, Meyer lemons. The vanilla is surprisingly good in a vinaigrette. We don’t use vanilla enough in savory things. This will change all that!
When the weather cools…okay becomes damn cold, there’s nothing quite like a bowl of soup or chowder. This is a simple combination of leeks, salmon, fennel and three kinds of potatoes. Chowder, without heaps of freshly ground black pepper, just doesn’t cut it on The Goddess’s table….
Moment of truth? This is really a garnish. In actuality, it’s a garnish that’s a relish, but “Condimento Picado” just sounds so much better than “Minced Relish”, doesn’t it? This is a perfect, tailor-made quick garnish/relish to add a punch of flavor to almost any plain, or simply prepared, protein.
I love fritters. They’re a great way to use veggies. They’re a great way to use up leftover veggies and they’re fried. And anything fried is just better. Face it. It’s true. You know it’s true.
Fruit relishes are a wonderful way to preserve have the summer flavors on the autumn and winter table. I love these with Thanksgiving turkey and don’t get me started on how good this relish is on a turkey sandwich. Not only that, fruit relishes are relatively easy.
