This is the way you might find chicken prepared in a Portuguese kitchen. I found it surprising how much oregano is used in their cooking. I knew that cilantro and bay leaves were used frequently, but why not? It makes for some tasty dishes. Continue reading
This is a perfect and perfectly delicious vegetarian entrée. Of course, you can stuff zucchini, but if you can get your hands on some patty pan squash, grab ’em up. They’re just so much more fun. These reheat well, so they can be prepared when you have time and then you can simply reheat for a nice mid-week meal.
We had a wonderful weekend with The Middle Progeny, The Unbound Reader, who were kind enough to interrupt their busy lives and bring our brilliant granddaughter to the Carolinas. After they left, the house seemed quiet…too quiet, so I rummaged around in the fridge and ran across some of the leftover
I really do so enjoy imitation crab meat. I know it’s not crab meat. I just like it. It’s never fishy when it’s heated. It has a nice consistency, it’s easy to work with and it just tastes so good. And it was really good in these patties.
This is a wonderful dish. The onions are just slightly charred, a tad burned, if you will. Turbot is a wonderful fish. It’s just slightly meaty and a bit on the sweet side. It lends itself well to sauces, and this lemongrass-laced sauce is perfect with it.
The Eldest Progeny loves General Tso’s. Make no mistake here…we all love it. But, he can be pretty passionate about it. We’ll see what he thinks about this version, which isn’t deep-fried and is a bit lighter, but loaded with flavor.
Peruvian cuisine is wonderful. If you have a Peruvian restaurant near you, and haven’t tried it. Go. Go right now. Peruvian roast chicken is magic and magically delicious. But today we’re making Chaufa Rice, Peru’s version of Chinese fried rice. It’s simple. It’s delicious. And it also happens to be a great way to use leftover chicken or pork, if you don’t have fresh.
Glazes can make a piece of meat or poultry. Since we’re looking at Easter (and this may work for a Passover lamb, too), I thought I might pass on a couple of simple glaze options for ham, pork or lamb. Truth be told, these could work well with turkey, too, but you’re on own, as I haven’t tried that…yet!
The Spicy Honey took me to
I love stuffed peppers. I didn’t always, but the I grew up. And now I do. I love the sweetness of the pepper, after it roasts. I seem to always like whatever is stuffed into them. It always seems to work. And these Papa Rellena Stuffed Peppers…baby, do they ever work!
