This is a summer salad. Yes, it can be made anytime of the year, but when the cucumbers and tomatoes are in season, it’s spectacular. It’s a nice picnic or BBQ side, too. And as always, it’s very flexible. But, no matter what options you choose, it’s delicious.
I think I’ve mentioned a couple of times (or twenty), that The Goddess has a fondness for eggplant. The season is in full swing now, so you might imagine that eggplant is finding it’s way into, onto, around, under, etc. her table. She’s been hasselbacking things recently, and why should eggplant escape her vision?
Caramelized onions….mmmmm…a little sweet, a little sour, and just plain yummy. The apple butter, with its hint of cinnamon, the saltiness of the feta and the crispness of the bacon juxtaposed against the creaminess of the caramelized onions, makes for a perfect “storm” of flavor!
Tzatziki (zat-ZEE-key) is truly summer. Oh yeah, it’s good all year long, but it runs screaming through summer. It’s nasty hot, isn’t it? So it’s time to think about cool things, like this sauce. This is great sauce to serve with
