An unknown, but clearly intelligent and resourceful person, once said, “necessity is the mother of invention”. I think this is particularly true when it comes to the culinary world. Many of what are now famous dishes, Spanish tortilla, Italian frittata, stir-fry’s, anything that’s a one-dish dinner, spring from necessity. And, this is just such a recipe.
Last fall we visited the Iberian peninsula. If you haven’t been to either Spain or Portugal, it should definitely be on your list, and soon. The food there is so delicious. The flavors so bright and un-muddy. This is what inspired this chicken. It took me back to Sevilla.

This is an excellent Instant-Pot recipe. Brown it and cook it all in the same pot. To quote Ina Garten, “How easy is that?” And, it’s just so damn delicious, too!
The basic poppy seed dressing recipe has been a part of my repertoire for years. But, The Goddess decided it was time for a change, hence the orange and vanilla. It’s still a little bit sweet and a little bit sharp—it really is the perfect summer dressing.
You know how sometimes the culinary gods intervene? This dish came about because those gods were playing and romping through my life. However, as happens now and again, those gods led me to deliciousness! This is redolent with Mexican flavors, it’s filling and it’s flexible!
This is the perfect foil for the Caribbean Pork Burger, but feel free to serve it with a pork roast, French fries, a wooden plank, steamed shrimp, grilled chicken or whatever you’re eating at the moment. It’s plain and simple, a great little sauce.
It’s always good to have a nice dessert sauce in your repertoire. This is absolutely spectacular made with local berries, when they’re in season, like right now. And you must slice the berries, sprinkle them with a bit of sugar and that’s all you need. But, some years, the berries aren’t quite as sweet.
The English-speaking Caribbean offers us some wonderfully complex flavors. Jerk Chicken is one of the dishes that’s synonymous with the islands. It’s has a nice kick of heat, is highly spiced and delicious. Thus, making it the perfect summer grilling dinner. You and your guests will love it.
