Tomato-Leek & Fennel Soup with LentilsI like lentils.  Actually, as far as legumes go, I think lentils may be my favorite.  The Latin Lover is, shall we say, less fond of them.  A bad childhood memory.  But I’m trying to convert him.  It’s always good to eradicate a bad childhood food memory and create a new, all-gown-up food memory!  I think this soup may have done it!   Continue reading →

Pan-Fried, Dry-Rubbed Salmon

I love salmon.  It’s pretty and pink-ish, it can take some bold flavors and it’s so quick to fix.  This is an easy, mid-week dinner.  It’s best if the salmon is seasoned ahead; you get a better, more robust flavor.  Salmon is easy and this version is pan-fried, but you can grill it, if you prefer.  We’re using our coffee rub here…it plays to the savory side of the salmon, but because of the frozen orange juice concentrate and the dulce de leche drizzle, there is balance.   Balance is good. 003 - CopyWe’ve talked about vinaigrettes in the Mother Sauces section.  This is a lower calorie version with huge flavor and it still has the mouth-feel of the higher fat version.  The reason…gum.  Not the kind you chew for fresh breath or bubbles, xanthan and guar gums.  Anyone who is gluten-free knows about this, but they usually use it to replace gluten in bread.  But, it’s much more than that.    Continue reading →
