As you know, The Goddess loves fruit with savory things. The spices are the “warm” spices—allspice, coriander, smoked paprika. And nectarines. There isn’t much that’s better than a juicy, ripe nectarine, eaten out of hand, with the juices running down your chin. God, I need a cigarette, just thinking about it. This dish combines the sweetness of nectarines, sweet potatoes and juicy chicken thighs seasoned with those “warm” spices, all in one pan.
“The corn is as high as an elephant’s eye”, so the song goes. It’s the perfect time to make a little corn relish. The zucchini are still bearing, the peppers are starting to bear and the corn…oh God, the corn! It’s so delicious fresh, but it’s nice to have a few jars of corn relish tucked away for later.
Fresh peach pie tends to disappoint me. It never seems to do justice to the flavor of a fresh, fabulous peach. It’s a bias I have, but I’m working on it. And that’s when I decided that maybe if I used part nectarines, I might be happier with the end result. Yes!
This isn’t exactly a chutney. It’s really a cross between a chutney and a relish. It’s sweet and sour. It’s fruity, but with a hit of savory because of the Worcestershire and vinegar. You know, it really doesn’t matter what we call it. What matters is that it’s delicious!
Okay. Right off I want you to know that The Goddess is misleading you. Yup. She’s leading you down the culinary garden path. She broiled the corn; she has no grill. And creamy? There is no cream, either. But, I’m here to tell you. This is truly delicious!
Spice cake was my father’s favorite cake. My mother had two recipes, a variation on her Sour Cream Cake, which frankly I’ve never had good luck with, and this one. Which I always have very, very good luck with.
This is a marriage made in heaven! Inspiration is a funny thing…it can come out of nowhere. It can be overheard. It can sneak up on you. Or is can simply be the unfolding of something unexplained…that’s sort what happened here.
I think I’ve mentioned a couple of times (or twenty), that The Goddess has a fondness for eggplant. The season is in full swing now, so you might imagine that eggplant is finding it’s way into, onto, around, under, etc. her table. She’s been hasselbacking things recently, and why should eggplant escape her vision?
Last fall we visited the Iberian peninsula. If you haven’t been to either Spain or Portugal, it should definitely be on your list, and soon. The food there is so delicious. The flavors so bright and un-muddy. This is what inspired this chicken. It took me back to Sevilla.
