Coffee-Brown Sugar Dry Rub

Coffee and chiles, with brown or maple sugar, make a terrific dry rub meat, particularly pork.  But, I use this on steak and burgers, but it is surprisingly delicious on both lamb and venison.  I haven’t tried in on duck, but I think it would be delicious.  A rubbed-filled jar is a great gift for the foodie in your life.  Continue reading →

038I’m reposting this, because well my God…look at that crust.  And tomorrow is St. Pat’s Day.  And make the Creamy Horseradish-Mustard Sauce today.  It’s a must.  So back to the post…Slow-roasted, brown sugar-crusted corned beef with beer and onion gravy.  Why would you save this just for St. Patrick’s Day?  It’s much too good and so simple to be left to one day a year.  It makes a great Sunday dinner and the house will smell good enough to eat!  Continue reading →

Mocha-Bourbon Chewy, Fudgy BrowniesI’m a chewy, fudgy brownie-type of woman.  Cake brownies are well, just cake, really.  Brownies should be dense and moist and rich.  These brownies are all that, but they have the added bonus of coffee and bourbon.  We’ll say these are “adult” brownies…I think they’re better the next day, but they’re damn fine, just out of the oven and cooled for maybe 15 minutes, too…damn fine!
