No, you didn’t misread that. This is “almost” hollandaise sauce. It looks like it. It tastes like it…so what’s the deal? Well, no butter! Yes! Now you’re asking, why, for the love of all that’s holy in the kitchen, wouldn’t you want butter in a hollandaise sauce? Let’s face it, hollandaise has to be made last minute…it really does. It doesn’t reheat well and it’s a bit on the rich side, right? The Spicy Honey loves, loves, loves Bolognese sauce. And admittedly, I’ve never been particularly happy with my previous attempts. They were just ho-hum. This one…I’m very happy with, and I think you might be, too!
This was one of those recipes that you read and think, “Oh, my God…I need to make this right now”…except it’s two o’clock in the morning and you’re reading cookbooks because…who knows why? Except you aren’t asleep. But, the next morning…okay, later in the morning, I was in the kitchen peeling pears!
When I was a child, bread pudding was a frequent visitor to our table. My father loved custard-y things and my mother’s bread pudding fit that bill perfectly. I make mine a bit different, but the roots are in that farm kitchen.
Tres Leches is the perfect dessert for entertaining. It’s rich, delicious and must be made ahead of time. Did I mention it’s mind-bendingly delicious? You really can’t overstate the delicious-ness quotient.
Grits are Southern comfort food. I was never that enamoured with them, until I had grits with cream and cheese added. OH, yeah! So good and so versatile. You can eat them as is, with a nice plop of butter, melting and oozing into the grits, or use them as a side, instead of rice or mashed potatoes, or sprinkled with bacon.
I love tomato sandwiches. When the tomatoes are bursting with flavor, falling off their vines and are in great abundance, The Goddess is in heaven. But a Goddess doesn’t live by tomato sandwiches alone. No. No, she doesn’t. This is relatively quick and easy, particularly if you purchase one of those rolled up pie crusts…and they are quite tasty and work great for this recipe.
Have you tried plantain chips? They’re readily available here in South Florida, but I’ve gotten them in the Northeast, too. Anyway, you need to get yourself a bag, because they make a great “crumb” coating…really. Crush them up and add use them to coat chicken breasts, or as in this case, fish fillets. Oh yeah, they’re a great alternative to potato chips, too (and they are gluten free, as well!).
Flan is one of those desserts that almost everyone loves. From a hostess’s standpoint, flan is a terrific dessert, as it really needs to be done in advance. It’s also a terrific dessert, because it’s simply delicious and deliciously simple.
