I probably shouldn’t be calling this Sicilian Eggplant, since I’m not only not Sicilian, hell, I’m not even Italian. This may seem like it has non-Italian flavors, but we need to remember that the Moors “visited” Sicily for quite a number of years. The Spicy Honey loves his mushroom soup. Usually, he’s happy with the canned stuff, but this is so simple to make; it is really soooooo delicious. I thought I probably should share the recipe. Because, you need to make this.
Who doesn’t love a good cheeseburger? And nice, crispy fries? So, The Goddess was thinking this might just work in a casserole. You know how she’s into these one-dish or skillet dinners. Many time when she thinks something will work, it doesn’t work as well as it does in her mind’s-eye. But, this turned out to be incredibly, almost indecently, tasty.
This is a dish my sister Joan used to make. She’s no longer with us, but her memory lives on with me in so many ways. This dish is one of the things she made for her large family and her busy life. It was fast, tasty and economical. What more could you ask for?

Fennel and fish are terrific together. The sweetness that develops when you sauté fennel is a beautiful thing. And it just works so well with fish…this one is a corvina fillet. The Goddess just had to add a bit of orange zest; you know how she is.
