This salad is good at any time of the year. It is a great summer salad, as no mayo, but it also is lovely in the autumn, when the leaves turn about the same color as the salad. Fruit relishes are a wonderful way to preserve have the summer flavors on the autumn and winter table. I love these with Thanksgiving turkey and don’t get me started on how good this relish is on a turkey sandwich. Not only that, fruit relishes are relatively easy.
Rum Pot is such a nice gift to give yourself for Christmas. It’s an even better gift to give to your holiday guests. The fruit is wonderful served with ice cream, over pound cake or bread pudding or in a bowl with a spoon…just as long as you’re not driving! Then there’s the liqueur. But, you need to start a Rum Pot in the summer.
