Farmhouse Cabbage, Potato and Bacon Chowder

I’ve never met a potato that I didn’t love. Potato versatility is, without a doubt, endless. But, what the Greeks do with potatoes, is heavenly. These are the perfect side dish. And on a busy day, they go together so quickly, you can easily make them for dinner. They are perfect with a nice lemony, roasted chicken. Or better yet, buy a supermarket roasted chicken. Sometimes life just needs to be that easy.
I adore ensalada rusa, or Russian Potato Salad. When we were in Spain, I ate every version I could find and no two were exactly the same. Isn’t that what makes cooking and dining interesting? This version, which contains beets, if both beautiful and refreshing.
Every now and then we need to return to the very “root” (or tuber, in this case) of cooking. This is one of those “basic” recipes. And soup is a great place to begin. Most of us love soup, or at the very least, like it. Particularly, when the thermometer begins to dip, as it is these days. But, we shouldn’t leave soup off of our summer menu, as many soups have the wonderful flexibility of being served either hot or cold. Potato soup is no exception…vichyssoise, anyone?
This is the way you might find chicken prepared in a Portuguese kitchen. I found it surprising how much oregano is used in their cooking. I knew that cilantro and bay leaves were used frequently, but why not? It makes for some tasty dishes.

When the weather cools…okay becomes damn cold, there’s nothing quite like a bowl of soup or chowder. This is a simple combination of leeks, salmon, fennel and three kinds of potatoes. Chowder, without heaps of freshly ground black pepper, just doesn’t cut it on The Goddess’s table….
Who doesn’t love a good cheeseburger? And nice, crispy fries? So, The Goddess was thinking this might just work in a casserole. You know how she’s into these one-dish or skillet dinners. Many time when she thinks something will work, it doesn’t work as well as it does in her mind’s-eye. But, this turned out to be incredibly, almost indecently, tasty.
Do you have some leftover Corned Beef from St. Patrick’s Day? Leftover potatoes, cabbage, too? This is leftover heaven, all rolled into a cabbage leaf. Not only that, it’s a skillet dinner…only one pan to clean…life just keeps getting better.
