Fennel and fish are terrific together. The sweetness that develops when you sauté fennel is a beautiful thing. And it just works so well with fish…this one is a corvina fillet. The Goddess just had to add a bit of orange zest; you know how she is. Continue reading
This is a chunky soup. It’s full of good vegetables and morsels of meat and like all good soups, it’s adaptable. Use what you have on hand, but today’s version worked out so well, The Goddess, being the benevolent deity that she is, decided to share, because the weather could turn at any moment!
Is this really Sicilian? Perhaps, if The Goddess lived in a Sicilian village she would be making this dish, with many of the flavors—tomato, capers, olives, garlic, orange (there it is again!) and some fennel—that are so prevalent in Sicilian cooking. KayJay, the love of The Eldest One’s life, is a treasure. And on top of that, she makes some of the best salads you will ever care to eat. They are works of art, I tell ‘ya, and this one is no different. The salad is excellent, but the Dijon-Tarragon Vinaigrette is spectacularly good.
This is The Goddess’s first posting from rainy South Florida, and what better meal than red snapper and shrimp with a great sauce? (Did I mention, it’s all about the sauce? I did…oh, okay!) I had forgotten how often it rains here, but that did not dampen our dinner, the first one together in our little furnished apartment…it’s like we’re newlyweds again!
