Have you tried plantain chips? They’re readily available here in South Florida, but I’ve gotten them in the Northeast, too. Anyway, you need to get yourself a bag, because they make a great “crumb” coating…really. Crush them up and add use them to coat chicken breasts, or as in this case, fish fillets. This stuff is unbelievably delicious. Spoon-over-the-sink kind of delicious. The simplicity of the mixture just doesn’t jive with the amount of flavor you experience. It’s a perfect foil for steak, grilled chicken or pork or salmon. Or an Asian-inspired Sloppy Joe! You have to make this sauce.

Does anyone really need a recipe for fruit salad? Probably not, but I’m giving you one anyone, just in case! This is a particularly nice combination of flavors, and it’s pretty. The lime juice and chile flakes go so very nicely with the fruit. Does that surprise you?

I was going to call this Autumn Hummus, but really, what does that tell you? Nada! The pumpkin and roasted peppers are there, but they are subtle. Not front flavors at all. And it’s very festive-looking.
Salmon, leeks and lemon are a lovely combination. I was going to make a cream-based sauce, but that just seemed too rich. I thought it would “muddy” the clean flavor of the salmon. This was light, very flavorful and rich enough. What more could a Goddess want?
The Goddess is in apple pie mode these days. She likes to reduce apple cider to add to the apples to really give an apple-y blast! She’s very explosive, you know! This vinaigrette was born from that reduction.
This isn’t exactly a salsa in the Mexican-dip-for-tortilla chips sense, but more of an uncooked, chunky thick sauce…maybe a dressing? But, no matter what you call it, it’s a nice change of pace and it’s delicious. It’s great over a steak, on a burger or even on chicken. This is just perfect for summer, when tomatoes come rolling in.
For years I’ve seen Croque-Monsieur on menus and thought, “hmmm, a grilled cheese made into French toast…” Thanks, but I think I’ll pass. Then, I had this version…with béchamel…mmmm.
