Mango-Cabbage Slaw with Sweet Chile VinaigretteThis is a nice, fruity and lighter version of cole slaw.  In summer, I like to add mango, pineapple, peaches, or nectarines to cole slaw.  I dress this version with a sweet chile vinaigrette, which compliments the fruit just ever-so nicely.  It’s summery.  Continue reading →

017Very, very thinly sliced fresh fennel makes a wonderful salad.  It’s slightly crunchy, but not too toothsome, the citrus compliments the fennel perfectly.  The rhubarb was a nice slightly sweet, and slightly sour, too.  Balance, baby, balance.  Continue reading →

Edamame, Corn, and Tomato Salad with HerbsIn my recipe box, this is called “Southern Confetti Salad”.  And it does look like confetti, doesn’t it?  But, that doesn’t really tell us much about this salad.  It is a great option for a summer picnic salad, as it’s both easy and can sit out for a bit.  But, it’s just as good in the dead of winter, with two feet of snow on the ground.  Did I mention that it’s also delicious?   Continue reading →

Roasted Sicilian Eggplant with Golden Raisins and CuminI probably shouldn’t be calling this Sicilian Eggplant, since I’m not only not Sicilian, hell, I’m not even Italian.  This may seem like it has non-Italian flavors, but we need to remember that the Moors “visited” Sicily for quite a number of years.  Therefore, this has many of the flavors they left behind, after they moved on.  You know, things like raisins, pistachios and cumin.  It matters not what those flavors are, it’s still darned delicious.  Continue reading →
