This is a summer salad if there ever was one. It’s perfect when the temperature soars, as it’s been doing here in the Carolinas, so this seems like the perfect dinner, giving me a delicious, quick, cold meal loaded with flavor, giving me just that little extra time I need to unpack more boxes…Yippee!!! This is a nice, fruity and lighter version of cole slaw. In summer, I like to add mango, pineapple, peaches, or nectarines to cole slaw. I dress this version with a sweet chile vinaigrette, which compliments the fruit just ever-so nicely. It’s summery.
This little summer salad is crisp, cold and just perfect for a hot summer day. Excellent with pork, but really, it works with almost anything. We had it with Shrimp in Scotch-Cream Sauce with Cilantro and Garlic. It was delicious.
In my recipe box, this is called “Southern Confetti Salad”. And it does look like confetti, doesn’t it? But, that doesn’t really tell us much about this salad. It is a great option for a summer picnic salad, as it’s both easy and can sit out for a bit. But, it’s just as good in the dead of winter, with two feet of snow on the ground. Those hot summer nights, when you just can’t turn on the stove, this salad makes a terrific supper. But, don’t limit yourself, as this “salad” can be an appetizer, too. It’s simple and simply delicious.
You know how The Goddess loves potato salads of all kinds. She’s given you
I probably shouldn’t be calling this Sicilian Eggplant, since I’m not only not Sicilian, hell, I’m not even Italian. This may seem like it has non-Italian flavors, but we need to remember that the Moors “visited” Sicily for quite a number of years. Therefore, this has many of the flavors they left behind, after they moved on. You know, things like raisins, pistachios and cumin. It matters not what those flavors are, it’s still darned delicious.
