These probably aren’t what you think of when you think of enchiladas. And that’s okay. Though these aren’t very traditional, they are truly delicious. They are also a great way to use up your leftover Thanksgiving turkey…timely, huh? Continue reading
You’ve heard about Texas Caviar, Cowboy Caviar, Bean Dip or whatever, right? You probably make it or at the very least, have eaten it. This isn’t exactly that…it’s really a riff on my mother’s Three Bean Salad and we could consider it “friends” with my
Tomato Soup and grilled cheese. It’s a marriage made in heaven and it is truly a heavenly combination. Today is one of those chilly, rainy days that’s perfect for soup…and maybe a sandwich. It’s comfort food, but of course, there’s a twist. There’s always a twist with The Goddess.

This is a chunky soup. It’s full of good vegetables and morsels of meat and like all good soups, it’s adaptable. Use what you have on hand, but today’s version worked out so well, The Goddess, being the benevolent deity that she is, decided to share, because the weather could turn at any moment!
Roasted vegetables are a thing of beauty, with their intense flavor and wonderful textural qualities, with just a hint of smokiness from the grill. With good bread, then make a wonderful Muffuletta that would make New Orleans proud!
