Chinese BBQ Pork-Peanut Butter-Hoisin Wrap

Pork cutlets are lean, they cook quickly and can be seasoned and flavored in a myriad of ways…all delicious! They can be eaten as is, right out of the frying pan, or slipped in a good roll and served with some nice toppings…decisions, decisions!
This is a chunky soup. It’s full of good vegetables and morsels of meat and like all good soups, it’s adaptable. Use what you have on hand, but today’s version worked out so well, The Goddess, being the benevolent deity that she is, decided to share, because the weather could turn at any moment!
We had leftover
As you can see, there isn’t too much that’s green about this sauce, except the cilantro in the “red onion salsa”. There was a plan, but then I browned the meat, and it left behind a great fond, so what’s a Goddess to do? She goes to plan B, of course. And this is Plan B…Pork with Sweet Potatoes and Green Chiles!
Both of my parents long ago left this world for the big farm in the sky. They had a good life, a long life and they were pretty happy people. It doesn’t get too much better than that. Anyway, yesterday would have been my father’s birthday and today would have been my mother’s birthday. So my thoughts turned to pork. In my family, food was much bigger than any gift. It was the gift. And pork was always there.
