Mélange, is defined as “a mixture, a medley”. It’s the perfect description of this “medley”—as this combines, shrimp, scallops, calamari rings, and imitation crabmeat, for the seafood. And the mélange of vegetables—red onion, olives, bell pepper, and recao or culantro. It’s sublime. It’s perfection…a mélange of flavors. Continue reading
This is a summer salad if there ever was one. It’s perfect when the temperature soars, as it’s been doing here in the Carolinas, so this seems like the perfect dinner, giving me a delicious, quick, cold meal loaded with flavor, giving me just that little extra time I need to unpack more boxes…Yippee!!!

Moment of truth? This is really a garnish. In actuality, it’s a garnish that’s a relish, but “Condimento Picado” just sounds so much better than “Minced Relish”, doesn’t it? This is a perfect, tailor-made quick garnish/relish to add a punch of flavor to almost any plain, or simply prepared, protein.
Think of this cole slaw as a “monsoon” of tropical flavors…pineapple, mango, orange…need I say more? Okay, maybe I do, but you’re going to want to slap this on some fish tacos or anything seafood-y. Or just have it for breakfast.
Those hot summer nights, when you just can’t turn on the stove, this salad makes a terrific supper. But, don’t limit yourself, as this “salad” can be an appetizer, too. It’s simple and simply delicious.
Pasta and bean salads are great for summer. Because this doesn’t have any mayonnaise in the dressing, it holds up well when the sun sizzles and you don’t want to.
Yesterday The Goddess very pointedly told you not to use oily fish for ceviche. Clearly, she’s not to be trusted. Because today, here she is, using tuna in ceviche. So, it turns out that tuna (and I have used salmon—horrors!) is really quite lovely in ceviche.
With the heat of summer around the corner, and sort of already here in South Florida, (though it is raining today) I decided it was time to make ceviche. Ceviche is probably the quintessential summer (read “hot weather”) dish. But, the thing is, it is barely springtime, so I thought some spring fruit might be a nice addition. Maybe even some diced sugar snap peas or asparagus….
I love Three Bean Salad. It always seems to be on the summer dinner tables, but it is truly good all year long. Anyway, I was hungry for it, but I decided to make a slightly different version than the one my mother made, which I have always loved. I added corn and potatoes. It works. It works well.
